Summer is passing by fast and before the rainy days return and we go back to our oatmeal mornings staple, I am determined to enjoy the estival flavours of seasonal fruits to the max. I run into some organic mangoes and couldn’t resist (even though they cost like a small kidney), but what is summer without a little bit of splurge?

Mango Breakfast Bliss - 1



1 cup of mango

2 tablespoons of overnight soaked buckwheat

1 teaspoon of baobab powder

1 teaspoon of chia seeds

1 teaspoon of flaxseeds

1 teaspoon of turmeric

2 cardamom pods (only the black seeds inside)

Juice of half a lemon

1 tablespoon of chopped walnuts

1 tablespoon of mulberries

1 tablespoon of dried coconut chips

1 tablespoon of pumpkin seeds

1 tablespoon of activated buckwheat

1 teaspoon of bee pollen

In a high speed blender put the mango, buckwheat, baobab, chia sedes, flaxseeds, cardamom and the lemon juicy and process. You can add some nut milk if you prefer a more liquid consistency, I like mine thick. mouse-like, to eat with a spoon.

Put the mango mouse in a bowl and sprinkle with the nuts and all the other ingredients.
