With temperatures suddenly rising like we are in the Sahara dessert, nothing says fresh as a cucumber as this salad. This lovely fruit will help you stay hydrated while protecting your brain, thanks to an anti-inflammatory flavonol called fisetin, freshen your breath and help your digestive health.

Cucumbers are also very low in calories and contain a lot of both soluble and insoluble fiber. The soluble fiber will dissolve into a gel-like texture in your gut, helping to slow down your digestion, while the insoluble fiber in their skin will help food move through your digestive tract with ease for healthy elimination.

INGREDIENTS (serves 2)

– 2 cucumbers

– 1/2 red onion finely chopped

– 1 avocado

– 1/3 of cashews

– 1/4 of lemon juice

– 1 Tbsp of white miso paste

– 2 Tbsp of extra virgin olive oil

– 1 Tbsp of poppy seeds

– Himalayan salt

– Black pepper

Let’s start by making the poppy seeds sauce placing the cashews, lemon juice, miso paste, and the olive oil in your blender and process until you have a creamy sauce. You can add water to achieve the desired consistency. Season with salt and pepper and add the poppy seeds.

With a potato peeler or a spiralizer make your cucumber noodles. Divide the noodles on two plates and top with the avocado and the chopped red onion. Serve with the poppy seeds sauce.
