For Day#2 of Meat Free Week I had a Massaged Kale Salad. If you haven’t tried kale in salads yet this is a great way of doing it. Massaging the kale with the dressing, breaks it down making it easier to digest. In minutes you will have a delicious lunch
– 2 cups of kale, without steams
– 1 apple, I used Topaz
– 1 small Hass avocado
– 6 walnuts
– 1 Tablespoon of extra virgin olive oil
– 2 Tablespoons of apple cider vinegar
– 1 teaspoon of Dijon mustard
– 1 teaspoon of maple syrup
Make the dressing with the olive oil, vinegar, the Dijon mustard and the maple syrup. I a large bowl combine the kale with the dressing and with your hands start massaging the kale for about 2-5 minutes or until you feel that the leaves are soft, they will also turn a brighter green.
Top with the apple, the avocado and the walnuts.
So, give it a massage! ♡
