This is so easy to make I am afraid to call it a recipe. For when you are craving some ice cream but don’t want to go crazy with sugar, this is a good healthy alternative to keep at hand and it will only take you 5 minutes to make. Swap the raspberries for frozen strawberries, mango or pineapple and go crazy experimenting with new flavours without guilt.

2 cups of frozen raspberries

1 cup of coconut milk

3-4 tablespoons of raw honey

2-3 mint leaves

1 tablespoon of walnuts

1 tablespoon of dried coconut flakes

Put the frozen raspberries, the coconut milk, the honey and the mint leaves in a food processor and blend until thick and creamy.  Keep in the freezer until serving.

To serve, take the ice cream out of the freezer 5 minutes ahead to soften. Scoop it into nice bowls and decorate with the chopped walnuts and coconut flakes.
