Beetroots are bursting with nutrients and so easy to cook.  They are full of potassium, iron, magnesium, folic acid and antioxidants. They help to lower your blood pressure and reduce “bad cholesterol”. They are great for treating anaemia, cleansing the colon and boosting brain power. This recipe takes 5 minutes to make,  the earthy sweet flavour makes it perfect as a spread or as a dip, and it is a great way to incorporate more of this purplish-red root to your diet.


1 medium beetroot raw

1/2 cup of raw almonds

1 tablespoon of grated ginger

2 tablespoons of chopped cilantro

2 tablespoons of extra virgin olive oil

1 tablespoon of apple cider vinegar

1 teaspoon of cumin

Salt & pepper to taste

Place all the ingredients into a food processor or high speed blender until smooth. Taste and season with salt and pepper. Serve with crackers or vegetable crudités (carrot, celery, zuchinni, cucumber…) Easy, fast and the perfect way to enjoy your beetroots raw! ♡
