INGREDIENTS (2 servings):
– 1 zucchini
– 1/2 cup of cashews
– 1 full hand of spinach
– 1 full hand of basil
– 1 kiwi
– 1 small clove of garlic
– 1/8 cup of extra virgin olive oil
– A pinch of Himalayan salt
– A pinch of black pepper
– 10 cherry tomatoes
Make the zucchini noodles with the spiralizer.
Cut the cherry tomatoes in half or quarters if they are big.
To make the pesto put the rest of the ingredients in a food processor, and process until everything is blended and with a creamy consistency. You can add a bit of water if it is too thick.
Serve the noodles with the pesto and top with the cherry tomatoes.
