INGREDIENTS:

– 2 cups of pumpkin in cubes

– 1 cup of pecans

– 1/2 cup of dried cranberries

– 1/2 cup of pumpkin seeds

– 3 cups of oats

– 1/3 cup of maple syrup

– 1/3 cup of caramelized ginger

– 1 teaspoon of cinnamon

– 1 teaspoon of nutmeg

– 1 teaspoon of all spice

– 1/2 teaspoon of ginger powder

– 1/2 teaspoon of cloves powder

Set a steamer basket into a large pot filled with water. Place the pumpkin cubes in the steamer basket, set the lid on the pot and bring the water to boil. Once is boiling reduce the heat and let the water simmer for about 30 minutes or until pumpkin is soft. Put the pumpkin cubes in a bowl and puree with a hand blender or a potato masher.

Preheat the oven to 200ºC and line a baking tray with baking paper. In a large bowl mix all the dry ingredients ingredients. Add the pumpkin purée and the maple syrup and mix everything well with your own hands make sure that everything is well coated. Put the mix on the baking tray and cook in the oven for about 15 minutes. Turn around the granola with a wooden spoon and put in the oven for another 15 minutes or until it is golden and crispy.

Let it cool off completely and keep in a glass jar or container.
